Joe TellusJoseph Tellus – Corporate Executive Chef

Son of New York born airman stationed at Lackland A.F.B. in San Antonio and native Texan mother, Joe found a way to get back home after leaving San Antonio when he was three years old.

In 1994, Chef Joe started his journey all over Europe when he helped a friend open a little restaurant-bar in the suburbs of Barcelona, Spain. He then took a kitchen manager job at the American themed, Reggie's Diner, in Barcelona. The well received burger and ribs "diner" concept gave Joe the wherewithal that would permit him to continue his mission. It was a mission that would lead him all over Europe from Poland to Portugal back to Brussels and Bologna. Working off and on across the continent allowed Chef Tellus to continue learning and living for the following five years until his next stop…New York.

November 1999 Chef Joe landed in New York and opened Guastavino's, Terence Conran's, megalith under the Queensboro Bridge. That experience would lead him to his involvement with the most significant enterprise of his career, Tao Asian Bistro. A runaway success since its opening in October of 2000, Tao brought on Chef Joe to replace the outgoing chef de cuisine in May 2001. Under the tutelage of Tao Corporate Executive Chef, Sam Hazen, Joe took firm control of the food and service and training that propelled Tao to the lofty heights at which still resides. Four years later, Chef Tellus and Tao would open to even bigger raves when it opened its mega-outpost in Las Vegas at the Venetian Hotel, but all good things must come to an end. Joe and Tao parted ways in January 2006 to take his post as Chef Tournant at The Venetian Hotel and Casino.

With the birth of his only daughter, Las Vegas did not hold any appeal when it came to the idea of raising a child. Joe wanted to go back to his birth state, Texas. He found a way, with Imperia, a high energy, upscale Pan-Asian restaurant and lounge in Austin's Warehouse District.

Joe joined MadDogs British Pub in August 2010.
